As you get down to business in 2019, remember sustainability, not for the products you use, but of YOURSELF and your employees. Can you continue to work / want to work at the pace you’re working? If not, no matter the business (or how phenomenal that 🥧 is!), it will start to suffer. In 2018, I realized that my work pace was “feeding” everyone but me — and my creativity was starving. So I began to shift, and when I heard about my friends Griff and @cherylday of @backinthedaybakery (Ep. 32) were shifting too, I was ready to tell the story, which came out recently for @skifttable. The number one asset in your life is YOU — self-sustainability is beyond bubble baths and vacations. Last night’s meal shared with @betsyandrews at @eattheordinary was something special: the most pristine shellfish with mignonettes, a ceviche hiding under toasted sunchokes, smoked oyster crackers set up that I couldn’t get enough of with housemade hot sauce and creme fraiche, banded rudder schnitzel, a zucchini carpaccio that might be the most deft use of micro herbs I’ve yet encountered (it was so so so damn good) and a buttermilk panna cotta, all with various wines (and one 👌🏻daiquiri) . Thank you to @mikelata and team for reminding me that just because it’s familiar, I need not forget this restaurant is simply among the best. #igotmyseafoodfix #chseats #letsdigin
